| gluten free oatmeal breakfast muffin recipe |

These muffins were a huge hit with the family and they are also simple to make. You can come up with countless different ingredients to create all kinds of fun muffins ! I made two different varieties to make sure to please everyone . As you can see some have the chocolate on top and some have it shaved and mixed right in ! Yum . My daughter who doesn't like oatmeal and I mean not even a little bit loves these and they have the same stinking ingredients lol . When they are done you can store them in fridge in an airtight container for up to five days . Make a couple dozen and freeze them . They are so ultra convenient in the morning to just grab, go and even travel with ! The serving size is one muffin . I hope you enjoy them as much as we do !





Ingredients & Prep :

(makes one dozen)

Pre Heat oven to 350&
Generously grease your muffin pan with coconut oil


Base Recipe

6 cups of organic rolled oats ( not the quick cooking kind)

6 large bananas

1/2 cup of almond or any other plant based milk ( coconut, hemp, cashew etc.)

2 Tbsp. of cinnamon

2 tsp. of Nutmeg

1-2 drops of clove essential oil ( that is ALL you need )

Mix Ins

Batch one ( 6 muffins)

1/2 cup of shaved dark chocolate (85% cocoa or higher, organic )

1/2cup of goji berries

1/2 cup of chopped raw walnuts

Batch two ( 6 muffins)

1/2 cups of raisins

1 square of chocolate for the top

You can be as creative as you like experimenting with all kinds of nuts , seeds, dried cranberries, dates , and coconut flakes .




Infusing your cooking with love makes incredible dishes!  ! I actually made my muffins in my grandfathers bowl . He was a truly amazing cook always creating amazing recipes . I keep the photo of my grandparents right above my sink so they are always with me when I am creating in my kitchen . Lots of love energy goes into my meals xoxoxo
 
 
 
 Directions :
 
 1. Mash up your bananas . I just use a fork .
 
 2. Add your cinnamon , nutmeg and clove stirring well.
 
 3. Add your oatmeal in and stir until all of the oatmeal is moist . This is also where I add the almond or nut milk in when needed but not too much.  You may not need to use the whole amount. This recipe should not be runny just super moist .
 
 4. Stir in any of your add in's.
 
 5. Put the batter into your muffin pan filling to the top . ( they won't rise )
 
 6. If you are adding chocolate to the top just place your little square in the middle . (once the muffins are done I spread out the chocolate before cooling so it covers much of the top )
 
 7. Bake 18-20 minutes . Checking periodically after 16 or 17 minutes.
 
 8. Let cool and they should pop right out!
